Eaten raw it is crisp and crunchy. It has medicinal uses. Cultivation: Native of North America and Europe. Prefers light to medium, rich, well drained soils in an open, sunny position. Drought and frost resistant. A deciduous plant, growing to 2.0m x 1m. Tuber colour can vary from white to brown or red to purple.
