Unopened flower buds of Caper plant, Capparis spinosa, are preserved in salty wine vinegar to develop flavour and become the gourmet condiment. Plants provided are the Eureka cultivar, a thornless type developed in Australia. Caper live to about 40 years and start to provide a significant harvest from about 4 years.
